A TASTE OF FAIR TRADE
During the lunch hour on March 20th, 2009, JCU's CRS Fair Trade Interns hosted "A Taste of Fair Trade," a Fair Trade drinks and desserts tasting for faculty, staff, and administrators in the Dolan Science Center Reading Room.

FAIR TRADE CHOCOLATE CAKE
INGREDIENTS:
- 2 cups Fair Trade Certified Organic Sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup Fair Trade Certified Organic Baking Cocoa
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp. Fair Trade Certified Organic Vanilla Extract
- 1 cup boiling water
DIRECTIONS:
- Heat oven to 350 degrees F. Grease and flour two 9-inch round baking pans.
- Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla; beat on medium speed of mixer for 2 minutes.
- Stir in boiling water (batter will be thin).
- Pour batter into prepared pans.
- Bake 30 to 35 minutes or until wooden toothpick inserted in center comes out clean.
- Cool ten minutes. Remove from pans to wire racks and cool completely.
- Frost with Fair Trade Chocolate Frosting.
- If desired, triple recipe and bake in varying sizes of pans to create three-tiered look in picture.

FAIR TRADE CHOCOLATE CHIP COOKIES
INGREDIENTS:
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup Fair Trade Certified Organic Sugar
- 3/4 cup Fair Trade Certified Organic Light Brown Sugar
- 1 tsp. Fair Trade Certified Vanilla Extract
- 2 large eggs
- 2 cups (12 oz. package) Fair Trade Certified Semi-Sweet Chocolate Chips
DIRECTIONS:
- Heat oven to 375 degrees F.
- Combine flour, baking soda, and salt in a small bowl.
- Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixer bowl until creamy.
- Add eggs, one at a time, beating well after each addition.
- Gradually beat in flour mixture.
- Stir in chocolate morsels.
- Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 9 to 11 minutes or until golden brown.
- Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

FAIR TRADE FUDGE
INGREDIENTS:
- 2 1/2 cups Fair Trade Certified Semi-Sweet Chocolate Chips
- 1 can (14 oz) sweetened condensed milk
- 1 dash of salt
- 1 1/2 tsp. Fair Trade Certified Organic Vanilla Extract
- 1/2 cup chopped nuts (optional)
DIRECTIONS:
- In a heavy saucepan, over light heat, melt chocolate chips with sweetened condensed milk.
- Remove from heat and stir in remaining ingredients.
- Spread evenly onto an 8-inch square pan lined with wax paper.
- Chill 2-3 hours or until firm.
- Turn out onto cutting board and peel off wax paper.
- Cut into squares.
- Store loosely at room temperature.
